YUMMY YAMS
Makes 24

2 yams
3-4 tablespoons Cranberry Fool (this will depend on the “dryness” of the cooked yams)
4 strips crisp bacon, chopped small
2 tablespoons bacon drippings
3 tablespoons sour cream
Salt and pepper to taste
24 pastry cups (small appetizer size)
Parmesan cheese, grated

Peel and cook yams (boil, bake or microwave) until soft. Transfer to a medium mixing bowl and add Cranberry Fool, bacon, bacon drippings, sour cream and salt and pepper. Use a hand mixer to blend until combined and smooth.
Spoon mixture into pastry cups. Dust with Parmesan. Serve warm or at room temperature. Unlike many appetizers, these Yummy Yams reheat well in a low oven.
