CRANBERRY FOOL YAMS
Yield: 6 servings

5 large yams (American or Japanese)
5 tbsps butter
5 tbsps Cranberry Fool
Scant 1/4 cup orange juice
1/4 tsp cinnamon
Salt

Peel yams and cut into large chunks; boil until fork tender (15-20 minutes). Drain and place in large mixing bowl.
While hot, add butter, Cranberry Fool, orange juice and cinnamon. Whip together until smooth.
Add salt to taste.

Don't save this dish just for the holidays. It's a wonderful, easy accompaniment to grilled fish or poultry.
