CRANBERRY
FOOL CRISP
Yield:
4 servings
1 cup Cranberry
Fool
3 ripe pears, peeled, cored and chunked
2 tbsps lemon juice
1/2 cup oatmeal
1 tbsp all-purpose flour
1/4 cup dark-brown sugar
1 tbsp unsalted butter
Preheat oven to
400 degrees F.
Toss Cranberry Fool, pears and lemon juice in a medium mixing bowl;
set aside.
Combine oatmeal, flour and brown sugar in a separate bowl. Cut butter
into dry mixture until the
dough just holds together and is the texture of coarse crumbs.
Spoon fruit into an 8" by 8" baking dish; spoon dry mixture
on top.
Bake until topping is crisp and brown, about 10 minutes. Reduce heat
to 350 degrees F. and bake until fruit bubbles, about 20 to 25 minutes
more.
Serve with ice cream or whipped cream.
A quick, simple,
scrumptious dessert that's easy to put together. Make it ahead of time
and pop it in the oven during dinner.
