CRANBERRY FOOL SALAD
Yield: 2 small salads

4-6 ounces baby greens
4-inch goat cheese log
1/2 cup pistachios
3 tbsps Cranberry Fool
2 ounces Champagne vinegar
1 shallot, chopped
4 ounces olive oil

Make dressing first. Combine Cranberry Fool, shallot, olive oil and vinegar. Mix well and set aside. Slice goat cheese log into 2-inch rounds.
Coarse-chop nuts in a small bowl. Roll the rounds in the nuts to coat them.
Place on a baking sheet and broil until lightly browned and slightly soft.
Mound baby greens on plates, center cheese on top and drizzle dressing all over.

This colorful salad is particularly festive as a first course. Or try it alongside grilled sausages and roasted baby potatoes.
