TENDERLOIN FOOL
Serves 4 to 6

1 1 lb. pork tenderloin
Salt and pepper to taste
1 large clove garlic, crushed
4-6 tablespoons Cranberry Fool

Preheat oven to 350 degrees F.
Season tenderloin with salt, pepper and garlic.
Place in an oven-safe baking dish.
Cover (do not mound) with Cranberry Fool.
Cook for 35 to 45 minutes or until it reaches desired doneness (we recommend 170 degrees F. for the internal temperature).
Remove tenderloin from oven and let rest for 10 minutes before carving.

If you want to go "fancy," deglaze the baking dish with 3 tablespoons Madeira and pour over the carved slices. Or, serve with the "Tart & Sassy Sauce."

Simple ingredients are the secret here. Any leftovers make a great sandwich with Cranberry Fool Mayonnaise.
