FISH
Serves
4
1 lb.
halibut or other firm-fleshed white fish, rinsed and dried
2 tablesoons butter or olive oil
2 tablespoons Cranberry Fool
1 cup white wine or dry vermouth
1 tablespoon butter
Salt and pepper to taste
Place
butter or oil in pan and cook on stovetop over medium-high heat until
butter foams.
Add fish and sauté until lightly browned and done to your taste.
Remove fish to serving platter and keep warm.
Add Cranberry Fool to pan and cook until most liquid evaporates (1-2
minutes).
Add wine or vermouth to pan and deglaze until reduced by half.
Remove pan from heat and whisk in butter.
Pour sauce over fish and serve.
Add
a salad and a baguette and your dinner is ready in 15 minutes or less.
