CRANBERRY FOOL PORK CHOPS
Serves 4

4 center-cut or rib pork chops, 1 1/4" thick
8 tablespoons Cranberry Fool
Salt and pepper to taste

Preheat oven to 300 degrees F.
Heat until it smokes a cast iron or other heavy ovenproof frying pan that is large enough to hold the chops comfortably.
Sear chops on both sides (1 to 2 minutes per side).
Top each chop with 2 tablespoons of Cranberry Fool.
Bake chops for 30 to 35 minutes until tender.
Remove from oven and let rest for 5 minutes before serving.

Short of eating Cranberry Fool straight from the jar, this is the simplest dinner recipe we know.
