CRANBERRY FOOL WINTER SQUASH
Yield: 2 servings

1 acorn (or other winter) squash
1 cup Cranberry Fool
2 tbsps butter (optional)
1/4 tsp salt (optional)

Cut squash in half. Scoop out the seeds and discard.
Place squash halves, cut sides up, in deep baking dish.
Fill cavities with Cranberry Fool.
Add enough water to fill dish halfway. Bake until tender, approximately 45-90 minutes (depending on size of squash).
Remove to serving dish and carefully stir Cranberry Fool into the softened squash.

Add butter or salt if you wish, but it is perfect without any "extras."
