MINIATURE
CRANBERRY FOOL SCONES
Makes
18-20 scones
1 1/2
cups all-purpose flour, sifted
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 egg, lightly beaten
6 tablespoons unsalted butter
1 cup Cranberry Fool
1 tablespoon grapefruit zest
3/4 cup heavy cream
Preheat
oven to 375 degrees F.
Sift together into a medium bowl flour, baking powder, salt and sugar.
Work butter into the dry mixture until it resembles coarse cornmeal.
Mix in Cranberry Fool and grapefruit zest.
Add cream and mix lightly until the dough forms a ball (dribble in more
cream if needed).
Place dough on lightly floured board and roll out 1/2-inch thick. Use
a 1 1/2-inch round cookie cutter to press out circles, or cut dough
into 1 1/2-inch diamonds.
Place scones on a cookie sheet at 1-inch intervals.
Bake on center rack for 15 minutes or until light golden brown.
