CRANBERRY
FOOLISH MINI-LOAVES
Makes
4 5"x3"x2" loaves
2 cups
all-purpose flour, sifted
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 egg, lightly beaten
3/4 cup fruit juice
1/4 cup cooking oil
4 teaspoons sugar substitute
1 cup Cranberry Fool
1/2 cup nuts (optional)
Preheat
oven to 350 degrees F.
Coat insides of 4 mini-loaf pans with cooking spray and set aside.
Sift together into a medium bowl flour, baking powder, salt and baking
soda.
Combine egg, fruit juice, cooking oil and sugar substitute in a small
bowl.
Stir liquid mixture into dry mixture just until moistened.
Fold in Cranberry Fool and nuts (if using).
Turn mixture into loaf pans (fill each halfway).
Bake on center rack of oven. Bake for 45 minutes or until a toothpick
inserted into center comes out clean.
You
can also make one large loaf (9"x5"x3"), but it will
take 50-60 minutes to bake.
Tart
and sweet tea bread. Serve it plain or toasted, with or without butter.
These delicious little loaves make wonderful gifts too.
