CRANBERRY FOOL COOKIE SURPRISES
Yield: 48 cookies

1 cup of sugar
1 cup butter
1 egg, beaten
1/2 cup milk
1 tsp vanilla
4 cups all-purpose flour
1/2 tsp salt
3 tsps baking powder
1 jar (11 ounces) Cranberry Fool

Preheat over to 350 degrees F.
Cream together butter and sugar in large mixing bowl. Stir in egg, milk and vanilla.
In a separate bowl, sift together flour, salt and baking powder. Stir dry ingredients into liquid mixture.
Refrigerate dough 3-4 hours.
Roll dough to 1/8-inch thickness onto a floured surface. Cut out cookies with 2 1/2-inch diameter circle cutter or glass.
Place 1 tsp of Cranberry Fool onto half of the rounds. Top each with another round and carefully press the edges together.
Place cookies on ungreased baking sheet and bake 12-15 minutes or until lightly browned.

These cookies are just as yummy with a glass of milk as with a cafe latte. And they make great holiday treats.
