INDIVIDUAL
CHOCOLATE TRIFLES
Serves 4
1 chocolate cake layer, at least 12 ounces, sliced to one-inch thickness
(Note: if you make it by hand, choose a recipe for a chocolate genoise;
if you buy it, make sure it is has a dense crumb – chocolate
pound cake is ideal.)
4 to 6 ounces of strawberries or other “perfect” market
fruits
8 ounces Mascarpone cheese
11 ounces (1 jar) Caramel Sin – Chocolate
3 tablespoons Grand Marnier liquor
Before you start, gather 4 to 6 classic Old Fashion glasses. Note:
sizes of these glasses vary slightly, so you might end up with some
leftover ingredients.
Cut out
two rounds of cake to fit inside of each glass (use a ring mold or
cookie cutter that is the same size as your serving glass –
or use the glass itself). Set aside on a cookie sheet.
Mix 2 tablespoons (approximately 1/5 jar) of Caramel Sin – Chocolate
into the Mascarpone in a small bowl until fully incorporated and smooth.
Wash, dry and slice fruit. Set aside (be sure to sprinkle on a little
lemon juice if you’re using anything other than berries).
Microwave 5 to 6 tablespoons (approximately 1/2 jar) of Caramel Sin
– Chocolate in a small glass bowl until it liquefies (start
at 30 seconds and add 5 second increments if necessary). Quickly stir
in Grand Marnier.
Construct your trifle in the following order: cake, Caramel Sin and
Grand Marnier, fruit, Caramel Sin Mascarpone. Repeat until you reach
the top of the glass. Garnish with chocolate shavings or a strawberry
“fan.”
These easy desserts make a very special ending for a dinner party.
They’re also easily portable if you like to serve coffee and
dessert informally after you’ve left the table.
